The world's first sustainable sushi restaurant opens in South Beach

prey south beach1 Hotel & Homes South Beach welcomes James Beard Foundation Award nominee Chef Bun Lai who will be infusing his sustainable seafood, plant and invasive species-based sushi style into The 1 Rooftop as one of its latest offerings to create the eco-conscience pop-up restaurant PREY.

Guests can enjoy dishes such as Finger lickin’ Carp Ribs, Roasted Feral Pig and Tempura Weed Che paired with foraged berry and plant sake or signature cocktails, while overlooking the beach and Miami skyline.

The 1 Rooftop is an adults only area for the ages of 21 and over.

The restaurant will be open to the public for one month – February 24th through March 25th. Many of the items found on the PREY menu are indigenous to Florida and Chef Bun will hunt, dive and forage for all ingredients himself.
