Guests at Swissôtel Sydney can look forward to an innovative and fresh culinary experience with the commencement of Tanja Nixdorf as the new Executive Chef.
Nixdorf is in the final stages of a complete gastronomic overhaul for the 5 star Sydney hotel with the newly introduced banqueting and in-room menus and the re-launching of Crossroads Bar and Jpb Restaurant.
German born, Nixdorf brings with her 15 years of culinary experience following tenures in restaurants and hotels in Switzerland, Bangkok, Singapore and the USA. Prior to joining Swissôtel Sydney, Nixdorf held the prestigious role of Head Chef at the Restaurant zum Kaiser Franz (Emperor Francis in the White Horse Inn) a 14 Gault Millau point restaurant in Switzerland.
Drawing from her experience in Asia, Nixdorf is known for her preference of fresh local produce. In the short time since joining the hotel, Nixdorf has been busy researching local Australian produce to ensure the freshest ingredients are utilised when creating her new menus. She was delighted to find over 200,000 extra employees working busily away on level 10 in the buzz factory – the hotel’s resident bees which provide fresh honey daily to all guests.
As the only female Executive Chef of a 5 star hotel in Sydney and the first for Swissôtel Sydney, Nixdorf’s modern take on the traditional dish is already becoming known in Sydney’s diverse dining scene.
