Jérôme recently worked at Sheraton Hua Hin Pranburi Villas as Executive Sous Chef and before was Chef de Cuisine at Sheraton Hua Hin Resort & Spa since 2013. Previously, he was an Executive Sous Chef at VIE Hotel Bangkok & VIE Villas Hua Hin and The Conrad Bangkok Hotel in 2010 respectively, to which he moved from Aubergine stand-alone restaurant in Bangkok.

Prior to embarking on his Asian adventure, Jérôme became the accomplished international chef he is today by gaining experience at La Salamandre, Papagayo, La Table du Mareyeur, Papa & Cie and Bistrot des Lices restaurants on the French Riviera.

The expertise and inspiration he gained there extended far beyond French and Mediterranean cuisine to include Mexican, Indian, Asian, Moroccan and other world cuisines. His professional culinary education includes classroom training at Restaurant de la Tour and Le Poulet Gourmand in France.He mentions butchery, pastry and bakery as his specialties.
