vito-romeoMr. Romeo joins the hotel from Shangri-La Hotel, Vancouver where he served as General Manager from March 2012 to March 2014. He brings with him an extensive resume that covers all aspects of hotel operations, with a particular passion for food and beverage, having started his career as an apprentice chef, graduating with a Degree in Hospitality Management from the Paul Bocuse Institute in Lyon-France and leading food and beverage operations in Michelin-starred restaurants and the world’s leading luxury hotels.

The native-born Italian who is fluent in three languages, began his hospitality career in 1987 as an apprentice chef at ‘La Coupole’ Hotel Mirabeau in Monte Carlo. Over the next decade, he honed his culinary skills in top hotels and restaurants in Monaco, Paris and England working both in the kitchen and food and beverage management roles. He then spent the next six years in managerial roles with the Alain Ducasse Group: General Manager for the opening of Bar & Boeuf in Monaco, Assistant Food & Beverage Director at the Hotel Plaza Athenee Paris and ultimately, Director of Operations and Development in New York for both, Alain Ducasse at the Essex House and Mix in New York.

In 2003, Mr. Romeo moved back to Europe to enhance his senior management skills at some of the world’s leading luxury hotels, including Hotel Conrad Brussels, Hotel Principe di Savoia – Milano, and Hotel Metropole Monte-Carlo where he worked closely with Chef Joel Robuchon.

Mr. Romeo joined Shangri-La Hotels and Resorts in 2008 as the Executive Assistant Manger – Food and Beverage at the company’s Aberdeen Marina Club in Hong Kong where he was in charge of six restaurants and extensive meeting facilities. A year later he became the Resident Manager at the 670-room Shangri-La Hotel, Beijing, a flagship for Shangri-La Hotels and Resorts, in China’s capital city. During this tenure, he also studied at Cornell and graduated in the general manager’s program in 2011.

Mr. Romeo replaces Sinan Yılmaz, who served as General Manager in Istanbul, before relocating to Beijing.
