Princess Cruises and Frescobaldi bring Tuscany to the Majestic Princess with a new culinary partnership that celebrates Italy’s legendary flavors on the high seas. Guests aboard the ship are now treated to a completely reimagined menu at Sabatini’s Italian Trattoria, inspired by the Frescobaldi family’s centuries-old winemaking and culinary traditions.

The updated Sabatini’s menu brings an authentic Tuscan dining experience to life through a series of carefully crafted dishes and exclusive wine pairings. Taking influence from Frescobaldi’s celebrated restaurant in Florence, the offerings focus on fresh, simple ingredients and the regional specialties that define Italian hospitality.

The new Sabatini’s Italian Trattoria, Inspired by Frescobaldi menu features six Frescobaldi inspired dishes showcasing the finest ingredients and time-honored culinary traditions of Tuscany. Guests can indulge in dishes offered throughout this multi-course menu spanning Zuppe e Insalata, Antipasti, Primi Piatti, Secondi Piatti and Dolci served daily and included as part of the experience. Highlights include:

  • Guazzetto di Cozze e Gamberi – Italian seafood stew with mussels and shrimp, simmered in fragrant tomato and white wine broth with garlic, herbs and a hint of chili; served with crusty bread for dipping.
  • Burrata e Prosciutto Crudo Stagionato 18 Mesi – creamy burrata paired with 18-month-aged prosciutto crudo, fresh cherry tomatoes, peppery arugula, and a drizzle of extra virgin olive oil.
  • Fettuccine al Tartufo e Parmigiano – truffle-infused velvety Parmigiano-Reggiano sauce, topped with grated black truffle, a crispy parmesan tuile, and a drizzle of herbed oil.
  • Tortello di Ricotta al Pomodoro e Basilico – delicate hand-made tortello pasta filled with rich ricotta and enveloped in zesty cherry tomato sauce, fresh basil, aged cheese, and a drizzle of extra virgin olive oil.
  • Filetto di Branzino e Carciofi Fritti – a celebration of fresh Mediterranean flavors featuring pan-seared sea bass fillet, paired with crispy fried artichokes and drizzled with zesty lemon-infused olive oil.
  • Torta Caprese – flourless almond cake blended with rich crema Pasticceria, caramelized hazelnuts, and exquisite chocolate brittle, paired with creamy limoncello mascarpone gelato and a drizzle of premium Frescobaldi olive oil.

Grand Tuscan Dinner Experience

For an elevated experience, Sabatini’s now features a Grand Tuscan Dinner held once per sailing. This special six-course event is designed to showcase the best of Tuscany’s cuisine and wine heritage. Guests are guided through an intimate dining journey, with each course expertly paired with Frescobaldi’s finest wines and grappa.

The Grand Tuscan Dinner menu includes dishes like Carpaccio Di Mare Mediterraneo—tuna and scallop carpaccio topped with caviar and black truffle—and Branzino Con Caponata alla Siciliana, a flavorful sea bass dish with Sicilian-style caponata. Dessert offerings such as Pinolata Senese and Cantucci Biscotti Con Grappa di Vino Luce round out the experience with light sweetness and Tuscan tradition. The exclusive event carries a $99 per person cover charge.

To enhance the wine-focused concept, the restaurant now offers a curated list of Frescobaldi wines, including selections like Mormoreto from Castello di Nipozzano and the rare Gorgona Bianco Toscana IGT. Five new signature cocktails have also been added, each crafted to reflect the character of the wines they accompany.

Guests can sip on the Gorgona Breeze, infused with citrus and herbs for a refreshing coastal feel; the sparkling Rosato Reverie; the bold Chianti Sunset; the aromatic Pomino Bloom; and the creative Mormoreto Old Fashioned, which uses a red wine reduction and Tuscan herbs to reinvent a classic.

Lamberto Frescobaldi, president of Marchesi Frescobaldi, expressed pride in the collaboration, saying it brings their family’s culinary heritage to a new audience. “Each dish is crafted with the same care and passion as the wines they’re paired with, creating harmony with every bite.”

The Frescobaldi family has been producing wine in Tuscany for more than 700 years, with a legacy that stretches through 30 generations. Their wines have graced European courts and are now making waves in luxury travel aboard Princess Cruises. This partnership offers guests an immersive cultural experience that blends history, flavor, and storytelling—all while at sea.
