Fontainebleau Las Vegas, a highly anticipated luxury resort and casino by Fontainebleau Development, is poised to redefine the gastronomic experience on the Las Vegas Strip as the newest hotel in Vegas.

Slated to open on December 13, 2023, subject to regulatory approvals, this grand establishment will unveil an impressive lineup of 36 pioneering restaurants and bars, with more to follow in 2024. This ambitious venture follows the success of Fontainebleau Miami Beach, which has been a beacon of luxury hospitality for decades.

Brett Mufson, Fontainebleau Development President, encapsulated the resort’s culinary vision, stating, “Our culinary program is a harmonious blend of tradition and innovation, reflecting Fontainebleau’s 70-year legacy while catering to the adventurous palate of our guests.”

Diners can expect a diverse range of culinary experiences:

  • Café Cuto: A modern European coffee bar, offering specialty coffees, pastries, sandwiches, and traditional Italian “Caffè Corretto” in an ambiance adorned with European marble accents.
  • Chez Bon Bon: A lively French patisserie, serving freshly baked pastries, handmade confections, and quick bites, set against a backdrop of classic patisserie-inspired décor.
  • Chyna Club: A brainchild of Hakkasan and Wagamama founder Alan Yau, this establishment promises an eclectic Chinese culinary journey in a cozy, club-like setting.
  • Cantina Contramar: A collaboration with Chef Gabriela Cámara, this venue will be a celebration of authentic Mexican cuisine, complemented by a Casa Dragones Tasting Room.
  • Don’s Prime: A steakhouse reminiscent of the 1950s, offering a range of Prime steaks, including exclusive Japanese and American Wagyu.
  • Ito: An exclusive omakase restaurant on the 63rd floor, led by chefs Masa Ito and Kevin Kim, offering traditional sushi with breathtaking views of the Strip.
  • Komodo: A Southeast Asian culinary experience, known for its signature Peking duck and a full sushi bar.

  • Promenade: An elevated food hall, introducing global flavors in a setting reminiscent of a European piazza.
  • The Tavern: A bar and restaurant adjacent to the casino floor, offering American classics with a Californian twist.
  • Vida: An American bistro, offering breakfast and lunch with classic brunch favorites.
  • Washing Potato: Alan Yau’s whimsical dining destination, offering a journey through the traditions of dim sum.

Additionally, the resort will feature a collection of bars, including Après, Azul, Bleau Bar, Casa Dragones Tasting Room, Collins, Nowhere, and Solo.

Among the most anticipated hotel openings in Las Vegas, Fontainebleau Las Vegas is strategically located adjacent to the Las Vegas Convention Center District on the Strip.
