Phuket’s Trisara resort, renowned for its luxury experiences, has unveiled its newest culinary addition: Waew. This Mediterranean-inspired dining sanctuary offers a delightful blend of Southern Europe’s flavors, served with an Andaman Ocean backdrop.
Waew, named after the triangular island seen from Trisara’s private beach, introduces the laid-back charm of the Mediterranean to Phuket. Nestled just a few steps from the shimmering beach, the establishment prides itself on sustainably sourced produce, reflecting the vibrant culinary traditions of the Levant and Southern Europe’s coastal regions. Guests can anticipate dishes bursting with flavors, achieved through techniques ranging from light grilling to live-fire cooking using a unique wood-fired oven.
Kittisak “Kitt” Pattamasaevi, CEO of Montara Hospitality Group, which owns Trisara, spoke about the fresh all-day dining concept. “At Waew,” he said, “diners are not only indulging in Mediterranean classics but are also treated to the mesmerizing beauty of the Andaman Ocean from our private beach.”
Waew promises an enthralling journey through Portugal, France, Italy, Lebanon, Spain, and Greece with every bite. Highlights from the menu include grilled sardines drizzled with Provence olive oil, lemon, and parsley; Pissaladière Provençal tart; and the smoked Australian lamb cutlets paired with chimichurri and cauliflower tabbouleh.
A connection to the ocean is evident in the extensive seafood offerings, like the Phuket lobster served with an herb salad and beurre blanc, and the Andaman seabream cooked in a unique seaweed-fennel salt crust.
Waew joins Trisara’s Michelin-starred PRU in setting high culinary standards. Montara Hospitality’s commitment to sustainability and creativity in dining, as showcased in their “Dine Good, Do Good” concept, is also manifested in Waew, which sources produce primarily from local artisans and the expansive Pru Jampa organic farm.
