1 Hotels has officially opened 1 Hotel Copenhagen, marking its debut in continental Europe with a sustainable property located in the Danish capital. The hotel, a reimagining of the historic Skt. Petri, positions itself as a Nordic flagship for the brand and reflects Copenhagen’s reputation as a leader in eco-conscious living and climate innovation.
The property combines Scandinavian design with a nature-led approach, offering guests interiors crafted from natural materials, living landscapes that evolve with the seasons, and a central location at Krystalgade 22. The opening extends the brand’s mission-driven focus on sustainability and sets a new benchmark for luxury hospitality in Europe.
Design Rooted in Sustainability
The transformation of the former Skt. Petri retains architectural heritage while introducing natural elements throughout the hotel. Interiors feature Danish craftsmanship, organic textures, and abundant greenery in atriums, terraces, and pocket gardens. A living wall enhances the exterior façade, while an onsite bee hotel highlights the importance of urban biodiversity.

Across 252 rooms and 30 suites, natural light, reclaimed wood, and sustainable finishes define the guest experience. Bathrooms feature stone basins, rainfall showers, and forest-inspired accents, while amenities include yoga mats and Bamford organic bath products. Minibars highlight local producers such as Rebæl sodas, Gro juices, True Gum, and Bornholm Pære Snaps.
Culinary Experiences
Green Michelin-starred chef Chantelle Nicholson leads the dining program, emphasizing seasonal, low-waste, and regionally inspired cuisine. The signature restaurant, Fjora, sources herbs and mushrooms from local farms and features interiors built from reclaimed and regenerative materials. The adjoining private dining space, Ember, uses timber from suppliers committed to reforestation.
PÆRE, a cocktail bar named after the Danish words for “pear” and “lightbulb,” offers seasonal drinks crafted with foraged botanicals. The Farmstand provides guests with complimentary local fruit, underscoring the hotel’s focus on mindful and sustainable food experiences.

Repurposed furniture and surplus materials from Danish producers feature throughout the property, while natural clay and marble paints improve air quality indoors.
Initiatives such as wooden key cards, seed paper notecards, and the 1 Less Thing program—encouraging guests to donate clothing for local charity JunkFood—reduce waste and support the community. Partnerships with ByBi, an urban beekeeping enterprise, and Koji Copenhagen, a fermentation lab, emphasize local collaboration and ecological awareness.
