Holland America Line unveils Koningstafel Chef’s Table experience, bringing a regal touch to fine dining at sea with an immersive evening that blends behind-the-scenes access and a multi-course feast. Dutch for “King’s Table,” Koningstafel is offered on cruises of 14 days or longer and first launched aboard Oosterdam in July. It will roll out to Westerdam, Zaandam, and Volendam in the fall, with the rest of the fleet scheduled to join by spring 2026.

A Royal Evening on the High Seas

The evening begins with a private cocktail reception in the elegant Ocean Bar, where guests can sip signature creations like “You Should See Me In A Crown,” made with Holland America’s own De Lijn Gin. This welcome sets the tone for an evening of refined indulgence.

Next, the ship’s executive chef personally leads guests into the galley for an exclusive tour. This behind-the-scenes walk offers a rare look at the scale and precision of cruise ship culinary operations, from the bustling preparation stations to the careful plating of dishes.

The evening culminates in a six-course dinner at a beautifully appointed table in the Dining Room. Fresh flowers, polished glassware, and fine table settings create an intimate, elevated atmosphere. Each dish is introduced by the chef and paired with thoughtfully selected wines. Vegetarian menus are available by request.

The Menu: Dutch Elegance Meets Culinary Theater

The set menu at Koningstafel blends heritage flavors with modern culinary artistry. Highlights include:

  • Amuse-Bouche: Asian Wagyu Steak Tartare with soy-mirin marinated egg yolk, nashi pear, and tempura shiso leaf.
  • First Course: Butter Poached Lobster Tail with lemongrass coconut, served alongside an aromatic “Smoked Champagne Cocktail.”
  • Second Course: Spinach Ricotta Malfatti with truffle garlic butter, seasonal black truffle, and parmesan espuma.
  • Intermezzo: Sour Cherry Granite pour with lemon sorbet.
  • Main Course: Herb Roasted Lamb Loin with pistachio crust, date purée, Mediterranean vegetables, and lamb jus poured tableside.
  • Finale: Artisan cheese selection and Honey Crémieux with lemon curd, bergamot gel, honeycomb, and lavender honey.

The artistry lies not only in the presentation but also in Holland America’s commitment to its Made Fresh Daily philosophy, sourcing regional ingredients and preparing each dish from scratch. The menu is further elevated by the Global Fresh Fish Program, which brings sustainably sourced seafood aboard from over 60 ports worldwide.

Beyond Koningstafel: More Flavors on the Horizon

Koningstafel is just the first of several new dining experiences planned for Holland America Line’s longer itineraries. Guests booking voyages of 14 days or more can anticipate additional themed dinners designed to celebrate global culinary traditions.

The Rijsttafel Dinner will debut on Baltic sailings in Tamarind restaurant, offering a Dutch-Indonesian tasting menu of small plates rich in spice and cultural heritage. This experience will be available for a supplemental fee.

The Tiki Dinner brings a tropical flair to the Pinnacle Grill on South Pacific crossings. Offered once per voyage on cruises 20 days or longer, it includes beverage pairings, souvenir tiki mugs, and themed service touches that make it a festive night to remember.

For those craving bold spices from the Indian subcontinent, the Indian Pop-Up Menu will appear exclusively on Legendary Voyages. Rotating menus will feature specialties such as Lamb Vindaloo, Paneer Butter Masala, and Rasgulla. Additionally, new Indian dishes will now be available fleetwide in the main Dining Room — even on shorter itineraries — and can be requested upon embarkation.

Booking the Experience

Koningstafel reservations can be made online before departure or on board, subject to availability. The experience is priced at $149 per person plus gratuities. Given its limited seating and personalized nature, early booking is recommended for guests who want to secure their place at the table.
